The G-2 is the all-stainless, hollow-handle contrast to Shun Classic (wood handle, Damascus) and Tojiro DP (Western handle, VG-10) on this site. Buy it if you want a light, seamless knife and can hold one first. The metal handle is polarizing when wet. It is not the value pick (that is Tojiro) and not the thin-pro pick (that is MAC MTH-80).

Care on this site

Global's CROMOVA 18 is stainless, but hand wash anyway. Dry the dimpled handle so it does not stay slick. Same thin-edge rules as other Japanese chef knives on this site: wood or plastic boards, no bones, no dishwasher. A whetstone at about 15 degrees per side is the usual home-cook path.
